cleaned, brined, seasoned, and placed inside an oven-roasting bag, takes about 2 hr to roast.

Kin Restaurant at Hotel Castaneda in Las Vegas (Chef Sean Sinclair, also of Legal Tender (closed for Thxgvg) in Lamy) will be doing a fantastic buffet on the 24th! Since it’s an hour away from us in Eldo (like the exquisite NOSA kitchen in Ojo Caliente to the north) we’ve booked a room overnight at the funky, restored Hotel (a former Harvey Hotel!), and can enjoy a breakfast? brunch? before we head back home… Yippee!

The older couple Dee and Bernie who provide an amazing pre thanksgiving buffet on the day before have been doing so for decades and it’s so authentic and delish — they are continually awarded accolades of the cleanest restaurant by the health department eating there breakfast and lunch Monday through Friday is always like eating at grandmothers house- even organic they just are not in the digital wave.
